Red Kale with Pasta

RED KALE WITH PASTA
This is a great winter recipe for pasta, the Kale is cooked in the same water as the pasta which turns it pink to great amazement with our children (Erin and Calum)
INGREDIENTS
About 400g Red kale
250g Pasta
2 tbsps olive oil
2 cloves garlic crushed
4 rashers lean bacon chopped
½ glass white wine optional
1 lemon, juiced
Fresh Parmesan for grating
Toasted pine nuts
METHOD
1 : Prepare the kale by stripping the stalk, then coarsely chop the leaves.
2 : Boil a large pan of well salted water, add the kale leaves and return to boil for 8 minutes. Drain the leaves. Reserving the leaves and the water.
3 : Bring the water bag to the boil then add the pasta and cook according to instructions.
4 : Add oil to a frying pan over a low heat, then add the garlic and cook gently for a minute.
5 : Next add the bacon and chilli flakes to the pan turn up the heat gently, then add the kale to the pan. Stir well until everything is coated with the oil.
6 : Turn the heat to high and add the wine (if using) and a ladle or two of water from the pasta if not using wine. Let it bubble and stir everything well together. Turn it down to simmer.
6 : When the pasta is cooked drain and add it to the pan with the kale and the sauce. Stir everything well together. Next rip the mozzarella into small pieces and through into the pan. Squeeze over the lemon, grate the Parmesan and scatter they pine nuts.
Season with freshly milled black pepper and Serve
