Beetroot Brownies
BEETROOT BROWNIES
We don't always think about beetroot and cake, but its fantastic, Beetroot brownies are rich and gooey, with the added earthy flavor and extra moist texture thanks to the Beetroot.
Ingredients
200g unsalted butter
200g dark chocolate
4 eggs
125g muscovado sugar
125g caster sugar
150g self raising flour
1 tbsp cocoa powder
200g grated beetroot
METHOD
1 : To make these chocolate brownies pre heat the oven to 160oc. Melt the butter and dark chocolate. Whisk together the eggs and sugars until fluffy.
2 : Fold the melted chocolate mixture, flour, cocoa and grated beetroot.
3 : Spoon into a 20cm greased and lined square tin. Bake for 35 minutes until firm, but fudgy in the middle, before cooling and cutting into squares.
Beetroot brownies might not be the healthiest of snacks, but the addition of the beetroot makes the brownies soft and fudgy without the extra calories. Beetroot is also a great source of antioxidants, apparently helping to keep you look young and is said to help fight of cancer.
