Broad bean and Courgette Salad
4 medium courgettes
300g podded broad beans
2 tbsp olive oil
10 walnut halves, roughly chopped
For the vinaigrette
1 tbp white wine vinegar
50ml olive oil
1. To make the vinaigrette, whisk the white wine vinegar and olive oil together with some seasoning, then set aside.
2. Boil a pan of water, add the broad beans and boil for 2 – 3 minutes, drain and plunge into iced water, leave to cool a lttle before removing skins.
3. Cur the courgettes into 4 lengthways and slice into 5 mm thick pieces.
4. Heat the olive oil in a frying pan, add the courgettes, cook , stirring for 5 – 8 minutes, add the broad beans and some seasoning, cook for 30 seconds, remove from heat and stir in the vinaigrette while still warm, serve with the walnuts.
