Broccoli & Potato Soup

BROCCOLI AND POTATO SOUP
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, crushed
1 kilo broccoli, cut into florets
3 potatoes, peeled and chopped
1 litre vegetable stock
Heat oil in a large saucepan, add onion and garlic, cook for 3 minutes until soft.
Add broccoli, potato and stock, bring to the boil, reduce heat and simmer for 10 – 15 minutes, remove from heat, process until smooth, return to pan, cook for 5 minutes until heated through, season to taste.
